Bacon
Traditionally dry-cured on the farm, using only salt, sugar, saltpetre and juniper berries. Packed in 225 gms (half pound) packs. Long back or short back. Oak smoked or unsmoked.

Ham & Gammon
As with the bacon, our hams and gammons are also traditionally dry-cured, and smoked or unsmoked. Available as whole or part hams, also as cured hock. We use "ham" to mean a joint on the bone; "gammon" denotes a joint boned out.
