Charcuterie, or fiambre as it is known in Spanish, has an central place in Spanish cuisine. Almost all fiambre is derived from the pig.

Our organic range of traditional Spanish charcuterie is from the Rioja Region of northern Spain. The small company which makes these delicious products (Luis Gil) has been operating for over 50 years, and use local organic pork. They are also producing their own organic pigs on their own farm.

The production system is very traditional, and uses no saltpetre or other chemicals.

The range is available as sliced and packed, or in the whole sausage.

Chorizo Extra

Chorizo is a bright red sausage made from chopped port meat seasoned with paprika, garlic, herbs and salt. The sausage is cured in a dry cool environment. The paprika lends the chorizo a distinctive spicy flavour.
Ingredients : ham, pork shoulder, garlic, paprika with denominacion de origen La Vera and salt. No preserving or colouring agents.

Available sliced (100g) or whole sausage (approx 300g)

Chorizo Spicy Extra

This is an extra spicy version of Chorizo.
Ingredients
are ham, pork shoulder, garlic, paprika with denominacion de origen La Vera of spicy variety and salt. No preserving or colouring agents.

Traditional Salchicon Extra

Salchichon is a hard sausage, similar to salami, made from chopped pork, coarsely ground pepper and seasoning
Ingredients: ham, pork Shoulder, Bacon, Spices and salt. No preserving or colouring agents.

Available sliced (100g) or as a whole sausage (approx 300g)

Cured Prok Belly (Panceta Curada)

This is the streaky bacon cured using paprika for added flavour. Cured with garlic, paprika and salt. The minimum curing time is 50 days. No preserving or colouring agents.

Cured Pork Loin (Lomo Curado)

Lomo Curado is a dry-cured pork loin and is very popular is Spain as part of a traditional tapas course. Extremely lean, it is flavoured garlic, paprika with denominacion de origen La Vera and salt, bringing out the full flavour of the pork. Serve drizzled with extra virgin olive oil. With cheese, it makes a great sandwich on crusty bread. Produced without colouring or preserving agents.
